Lodge One caters to up to 116 guests and is renowned for its generous buffets, family-style sharing platters, harvest tables, and à la carte service during lower occupancy. The focus is on hearty, beautiful presentations with a touch of refinement. Lodge Two offers an intimate, high-end à la carte experience with a strong emphasis on attention to detail and elevated plating.Both lodges feature Bush Dinners, Boma Dinners, and a signature Afternoon Teabringing the essence of the bush to life through every bite.
Key Responsibilities:
Oversee all kitchen operations across both lodges, ensuring consistency in quality, presentation, and guest satisfaction. Lead, train and inspire a diverse culinary team in remote environments. Plan and execute varied menusfrom interactive buffets to fine-dining à la carte. Drive creativity for themed experiences including Bush Dinners and Boma nights. Manage stock control, supplier relationships, and kitchen administration. Uphold hygiene, safety, and sustainability standards. What Were Looking For:
Proven Executive Chef experience in a 5-star safari lodge or remote luxury property. Strong leadership and mentoring skills with a collaborative approach. Ability to balance volume service (buffets, platters) with refined à la carte finesse. Excellent planning and organizational skills under pressure. A love for the bush, sustainability, and creating magical guest moments through food. Package & Perks:
