- Lodge One caters to up to 116 guests and is renowned for its generous buffets, family-style sharing platters, harvest tables , and à la carte service during lower occupancy . The focus is on hearty, beautiful presentations with a touch of refinement.
- Lodge Two offers an intimate, high-end à la carte experience with a strong emphasis on attention to detail and elevated plating.
Key Responsibilities:
- Oversee all kitchen operations across both lodges, ensuring consistency in quality, presentation, and guest satisfaction.
- Lead, train and inspire a diverse culinary team in remote environments.
- Plan and execute varied menus—from interactive buffets to fine-dining à la carte.
- Drive creativity for themed experiences including Bush Dinners and Boma nights.
- Manage stock control, supplier relationships, and kitchen administration.
- Uphold hygiene, safety, and sustainability standards.
- Proven Executive Chef experience in a 5-star safari lodge or remote luxury property.
- Strong leadership and mentoring skills with a collaborative approach.
- Ability to balance volume service (buffets, platters) with refined à la carte finesse.
- Excellent planning and organizational skills under pressure.
- A love for the bush, sustainability, and creating magical guest moments through food.
