Duties:
- Ensure that:
- Service levels are maintained and sustained
- Staff training is updated and signed off
- Quality and concepts are implemented and maintained
- Stock control system controls are in place and maintained
- SOPS and policies are being followed as set out by the company
- Operational implementation of menu and wine policy as advertised by the Food & Beverage Custodian
- Staff management:
- Staff work rosters
- Conduct performance reviews
- Training
- Maintain dress code standards
- Discipline
- Maintain staff files
- Assist in co-ordination of functions and events
- Host and control all functions and events
- Liaise and maintain the aesthetics manual that would be handed to you
- Maintain the Facilities Management Manual
- Draw up Management Reports as required
- Sign off monthly accounts
- Maintain the F&B staff personal files and HR related matters
- Maintain database (Regulars, VIP’s)
- To ensure that restaurant’s reservations book and database is maintained
- Upsell F&B, accommodation and tourism services
- Inform guests of current specials
- Recognise guests who regularly visit the bar/restaurant
- Maintain DOT Sales and Marketing file
- Take responsibility of sales and targets of special events
